I Stopped Buying Candy After Making These Vegan Vanilla Gummy Bear Recipe Without Sugar Without Gelatin
This recipe replaces gelatin with agar agar, a plant based gelling agent that sets without any animal product. It is soft, holds its shape, and has that classic chewy bite without any of the sugar crash that follows the real thing. I call it my stevia gummy bears recipe because stevia is the only sweetener that goes in, and it never overpowers the vanilla.

Ingredients
- 1 cup water, divided
- 2 teaspoons agar agar powder
- 1 teaspoon vanilla extract
- Stevia drops, to taste (start with 10 to 15 drops)
Execution
Bloom the Agar – Pour ½ cup water into a small bowl and sprinkle the agar agar powder over it. Let it sit for 2 minutes to soften.
Heat the Water – Add the remaining ½ cup water to a small saucepan and heat over medium heat until it just begins to simmer.
Dissolve Completely – Whisk the agar agar mixture into the saucepan for 2–3 minutes until fully dissolved. The mixture should look clear and slightly thickened.
Add Flavor – Remove from the heat and stir in the vanilla extract and stevia drops. Taste and adjust the sweetness if needed.
Fill the Molds – Work quickly, as agar agar starts setting as it cools. Pour the mixture into a silicone gummy bear mold using a dropper or small spoon.
Chill Until Firm – Place the mold in the refrigerator for 20–25 minutes, or until the gummies are fully set
Store the Gummies – Pop the gummies out of the mold and store them immediately in an airtight container.
Additional tips
- Prepare the Mold First – Agar agar sets much faster than gelatin, so make sure your gummy mold is ready before you start cooking.
- Reheat if Needed – If the mixture begins to firm up in the pan before you’ve finished pouring, gently reheat it for about a minute until it becomes smooth and pourable again.

Storage And Serving
Store the gummies in an airtight container in the fridge for up to a week. I do not recommend freezing since the texture can turn grainy once thawed. Serve them straight from the fridge as a quick lunchbox treat or an after dinner snack for the kids.
